Making A Delicious Fish Sandwich

Made with fresh fish and flavored with dill, these burgers are delicious with salad or tucked inside burger buns with a little mayonnaise and some crisp lettuce.

Preparation time for these fish burgers is about 15 minutes and Cooking time is only about 10 minutes.

Eat hot or cold with a small squirt of lemon juice, and a tomato and cucumber salad dusted with dill.


Fish Burger Recipe

Ingredients:

1 pound skinned white fish or salmon fillets
1 small onion
1 egg, beaten
3 tablespoons fresh white bread crumbs
1 tablespoon chopped fresh dill
2 tablespoons finely ground almonds

Salt and pepper to taste
1 egg white
3 tablespoons finely crushed cornflakes

3 tablespoons corn oil

Wash fish under cold running water and pat dry with paper towels. Cut fish into cubes. Peel onion and cut into eighths. Grind with the fish cubes,

Put fish and onion mixture into a bowl with egg, bread crumbs, dill, ground almonds, and salt and pepper. Knead by hand until smoothly combined and mixture holds together.

Cover and chill for 1 hour.

Shape fish mixture into 4 burgers, each about 1-inch thick. Brush burgers with lightly beaten egg white, coat with the crushed cornflakes. Chill for 30 minutes.

Heat oil in a heavy-base skillet over a medium heat until sizzling and hot.

Add the burgers, reduce and panfry for 10 minute, turning once at half-time.

Fish burgers are certainly a healthier alternative. A well-prepared one tastes great as well, but seasoning is important.
